The most important step for using Bitter Leaves is reducing the bitterness before cooking:

Wash/Squeeze (Fresh): If using fresh leaves, they must be washed repeatedly while squeezing the leaves until the wash water runs clear, which removes most of the bitterness.

Soak (Dry): If using the dried leaves shown in the image, you must first rehydrate them by soaking them in hot or warm water for about 30 minutes to 1 hour.

Rinse/Squeeze (Dry): After soaking, rinse the leaves multiple times and gently squeeze them to remove any remaining bitterness and grit.

Cook: Add the prepared (soaked/squeezed) bitter leaves to your soup or stew. Since they are already dried and processed, they require less cooking time than fresh leaves.
