Recipe Using ZOMI Spiced Palm Oil: Palm Nut Soup (Abenkwan)
Ingredients:

1 kg goat meat or chicken (cut into pieces)

2 cups palm nut concentrate (or palm fruits)

2 medium onions
-
4 medium fresh tomatoes

2 tbsp tomato paste
-
3 cloves garlic
-
1 thumb-sized ginger
-
2 scotch bonnet peppers (adjust to taste)

2 tbsp NINA International ZOMI Spiced Palm Oil

Salt and seasonings to taste

4 cups water

Garden eggs (optional)
Instructions:

Blend onions, garlic, ginger, and peppers into a smooth paste.

In a large pot, add meat, blended mixture, tomato paste, and a little water. Season and cook until meat is tender.

Blend tomatoes and garden eggs (if using) and add to the pot. Simmer for 10 minutes.

Stir in palm nut concentrate and water, mix well, and cook for another 15 minutes.

Add 2 tablespoons of NINA International ZOMI Spiced Palm Oil for enhanced aroma and flavor.

Simmer gently until the soup thickens and oil begins to rise to the surface.
